MAKES 1 TORTE
INGREDIENTS
Guacamole
5 avocados
2 oz. (60 g) chopped cilantro
2 Roma tomatoes, diced
1⁄4 white onion, diced
1 jalapeño, seeded and diced
1/2 a lime
Kosher salt, to taste
Refried beans
12 oz. (350 g) pinto beans (canned)
1 white onion, diced
1/4 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon chili powder
Kosher salt to taste
Oil of choice for refrying beans
Additional Torte ingredients needed
2 cups of shredded white cheddar cheese
2–3 cups sour cream
Red, yellow, & blue corn tortilla strips for decoration
Yellow, green, & red bell peppers for decoration
METHOD
For the guacamole
Skin and deseed avocados into a bowl.
Add cilantro, tomato, onion, jalapeño, salt, and lime juice.
Mash all ingredients together in bowl until smooth.
For the refried beans
To refry the beans you will need a medium sized pan on the stove with medium heat.
Sauté chopped onion in oil until brown.
Add cumin, paprika, chili powder, salt and beans, and stir.
Continue stirring until beans appear refried; look somewhat dry but still moist.
For the torte
Cover the inside of a nine-inch spring form pan with plastic wrap.
Add refried beans to the spring form pan. Evenly distribute beans on bottom; should yield 1 inch layer of refried beans. Make sure to pack beans tightly.
Allow refried beans to cool down in fridge for about 1–2 hours until beans are cold.
Add the guacamole on top of the beans until a smooth layer is achieved.
Place the spring form pan into the fridge for about an hour to cool and harden.
Then add white cheddar cheese on top of the guacamole and distribute it evenly.
Place the spring form pan into the fridge for about an hour to cool and harden.
Take out the spring form pan and flip onto a flat surface and remove the plastic wrap along with the pan.
Add sour cream on top of beans and evenly distribute all around.
Serve with corn and flour tortilla chips.
Optional decoration: Add the tortilla chips around torte, wedges of bell pepper on top of torte, and draw flowers on top of torte with sour cream.
